What should I wear to cooking classes?

" You should dress casually and comfortable. For hands-on classes, comfortable clothing and kitchen-style shoes (closed toe shoes) are recommended.  We will provide you with an apron to wear during the class.  Dangling or excessive jewelry as well as loose hanging clothing is not recommended". Paulette Licitra Releases Winter 2014 Italian Cooking Class Schedule

On the heels of the University School Evening Classes roster of food and drink classes (many of which sold out in minutes, by the way), Paulette Licitra has released the schedule for her wInter 2014 series of Italian cooking classes. Licitra is a great teacher, and her classes are very entertaining. Plus you get a heckuva a meal at the end of class.
She charges $50 per class, and she also offers gift certificates that are good for a year in case you want to make a holiday present out of a session or two. Classes are limited to six students and take place in her home kitchen in Bellevue, so the atmosphere is very informal, like learning at your nonna's elbow. try this


MEDITERRANEAN TUNA SALAD



  • 4 (6-ounce) cans albacore tuna, drained well
  • 1 (14-ounce) can quartered artichoke hearts, drained
  • 1/2 cup chopped red bell or piquillo peppers
  • 3/4 cup sliced Greek olives
  • 1/2 small red onion, finely chopped
  • 1/4 cup chopped flat-leaf parsley
  • 1/4 cup chopped basil
  • 2 cloves garlic, finely chopped
  • 1 teaspoon dried or 1 tablespoon chopped fresh oregano
  • 1/2 cup mayonnaise
  • 3 tablespoons lemon juice
  • Salt and freshly ground pepper, to taste
  • Put all ingredients into a large bowl and gently fold together until well combined. Serve on sliced bread as a sandwich or spoon over a green salad.
